The past few days have mostly been about sorting out the insurance situation and trying to put together the building and renovation team, as well as sketching out a schedule for the work. Today was also our first chance to get stuck into clearing out the debris. The reality is that just about everything is debris! Walls, floors, furniture, ovens, dishwasher, fridges, doors…it all goes, as does a large percentage of our wine stock. Water – you can’t live without it but it’s such a destructive and corrosive force of nature when it’s swimming round your restaurant for sixteen hours at three feet deep. Those chairs in the photo look okay but they’re all cracking as they dry. So are the doors and other woodwork and the walls and floors are starting to bulge and pop.
It will still be a few days before the insurance is sorted but I’m very optimistic about it being comprehensive and speedy. Same goes for the building side of things – we’ve got a good team on board and we will have a day to day schedule set up by friday. Right now I would say that a few days before christmas is a reachable target and it’s certainly something we all want to do, to be back as part of Cork life before the christmas break.
We’re also in the process of setting up a facebook page as another way to keep people in touch with what’s going on so please look out for that in the next few days too. Meanwhile, check back here on Friday or Saturday for a definite target date for re-opening. I can’t emphasise enough how much everyone’s support and goodwill means to us in this time, and I promise that the next version of Cafe Paradiso will be the best yet.

My colleagues and I can’t wait to have our previously planned christmas night out in mid January, dare I say no publicity is bad (Ryan Tubridy) don’t mind if you change the furniture but don’t change the food. Eva
